What makes this batch special

This batch comes from the Narrandera region, where our bees were working strong summer flows on River Red Gum in full bloom. River Red Gum is known for producing rich, bold honey during hot summer conditions, with deep flavour and excellent natural body.

The result is a full bodied honey with strong character, smooth sweetness, and a slightly earthy, malty depth that reflects the iconic Australian river landscapes.

Processing and handling

Harvested on: 10 January 2026
Extracted on: 14 January 2026
Extraction location: Wagga Wagga, NSW

Heat used: The honey was gently warmed to approximately body temperature only to allow careful extraction and bottling. This low temperature does not damage the natural goodness, enzymes, or flavour of the honey.

Storage advice: Store in a cool, dark place and keep lid closed.

Natural crystallisation explained

Crystallisation is a natural process that occurs in real, pure honey over time. It happens because honey is a natural sugar solution, mainly made up of glucose and fructose. Glucose naturally forms crystals, especially in cooler temperatures or when tiny natural particles in the honey act as starting points.

This does not mean the honey has gone bad. In fact, crystallisation is a sign of high quality, genuine honey that has not been heavily processed or blended.

How to return honey to liquid form

If your honey becomes firm or crystallised:

• Place the jar in warm (not boiling) water
• Let it slowly warm and gently stir if needed
• Repeat until smooth and liquid again

Avoid microwaving where possible to protect flavour and quality.
